Lemon-Garlic Shrimp Kabobs

Makes 4 to 6 servings

2 lbs unpeeled jumbo fresh shrimp
1 medium onion, diced
4 cloves garlic, minced
½ cup vegetable oil
¼ cup plus 2 tbsp fresh lemon juice
3 tbsp soy sauce
2 tsp ground ginger

  1. Peel shrimp, leaving tails intact; devein, if desired.
  2. Combine onion and remaining ingredients in large shallow dish; add shrimp, stir gently to coat. Cover and marinate in refrigerator for 2 to 3 hours, stirring occasionally.
  3. Drain shrimp, discarding marinade. Thread neck and tail of each shrimp onto six 14-inch skewers so shrimp will lie flat.
  4. Grill shrimp, uncovered, over medium hot coals (350° to 400°) 3 to 4 minutes per side or until shrimp turn pink.
